I also have no clue how to count cards so i'm answering this qwuestion with all things being equal 1- hit 2- hold 3- hit or hold depending on gut.
I am assuming the casino is not offering surrender or insurance and is playing with multiple decks.
That being said generally here's how I would play your scenarios.
I usually do not surrender even when it is offered and the odds say to do so and have a couple of blackjack apps I use a lot experimenting with different plays and strategies.
When the dealer shows 10 you are going to hit any 16 except where you have a pair of 8's in which case you will split them.
When the dealer shows 5 you are going to stand on 16 unless you have a soft 16 ace and 5 in which case you will double down.
When the dealer shows an ace the same rules apply as in 1.
The only distinction would be if the casino offered insurance but that's not part of our equation here.
FWIW I know of no casinos objecting to a player using an odds or strategy card as opposed to actual card counting.
